Our philosophy has always been rooted in authenticity. That is why we import our key ingredients directly from Spain, ensuring every dish carries the true essence of its origin. Our jamón comes from the prestigious César Nieto, a family renowned for producing some of Spain’s finest cured meats. our award-winning extra virgin olive oil — crowned first for several consecutive years.

We proudly present one of our most valued additions: the Maestro Jumaco oven, crafted by Spanish artisans with over 130 years of tradition. This iconic horno moruno design is renowned for its ability to cook evenly and deeply, revealing the true flavors and aromas of every ingredient.

For our guests, this means juicier textures, authentic aromas, and a distinctive golden finish — a level of quality achievable only with a genuine handcrafted oven. The gentle embrace of its heat brings a homemade essence to our food, echoing the warmth of traditions. Every bite carries the subtle, soulful flavor of fire and craft — a taste that feels both familiar and truly unforgettable.

Alfonso Maestro – sixth-generation “Hornos Jumaco Maestro” owner during Azahar reopening - November, 2025

Building upon this tradition, most of our dishes are brought to life within the Maestro Jumaco oven, where steady heat and artisan craft work in harmony. It is here that ingredients transform — slowly, patiently — allowing flavors to deepen, textures to soften, and aromas to unfold with natural elegance.

Our signature creation is the whole roasted suckling pig, prepared in the revered style of Segovia, a region of Spain celebrated for its centuries-old mastery of “cochinillo.” We import each piglet directly from Segovia, ensuring the authenticity of this iconic recipe: tender, velvety meat encased in a delicately crisp skin.
